Chicken Farm Baker's Project # 42: February Snack Box: Open it and fall in love (with ME), again: Ginger rice ball


I love a sushi rice, ^^, even I don't eat it with sushi. It's sweet and sour, very full of flavor. This recipe can be easily scale up, if you want to eat more, haha

This ginger rice ball recipe is a part of Chicken Farm Baker's Project # 42: February Snack Box: Open it and fall in love (with ME), again. Our host want to have some savory thing, and I think that rice can be in the box too,^^.

Ginger rice ball
serve 1

Sushi Rice
1cup (200ml) ........................ Short grain rice
1cup (200ml) ........................ Water
20g ......................................... Rice vinegar
20g ......................................... Sugar
................................................. A pinch of salt

Ginger pork
1tbsp ...................................... Olive oil
1 .............................................. Onion, finely sliced
1tbsp ...................................... Ginger, chop or finely sliced
150g ....................................... Minced pork
1 1/2 tsp ................................ Shoyu
1 1/2 tsp ................................ Mirin
1/2tsp .................................... Granulated sugar

Wash the rice with drinking water for 3 time, until the water is clear.
Pour enough water to cover the rice and let it rest for 30 minutes.
Cook the rice with 200ml of water.
Warm vinegar, sugar and salt in a microwave for 20-30seconds, stir until the sugar melt.
Pour the mixture over a hot rice, stir until fully combine,use a fan to reduce the heat.

Put a pan over medium-high heat, pour the oil into the pan, cook the onion until soften.
Add the minced pork stir, add the ginger, shoyu, mirin and sugar, stir until fully cook.
Add enough water to make it not too dry.
Dip your hand in the water, knead the rice to make it stick together, put a ginger pork in the middle and roll into a balls.
