Chocolate cookies with Mars ice cream filling

  Looking at the list on my blog, I baked, cooked and created many things but it's surprising that there are many, many things that I never made them before. 


Because changing the ingredients (or quantity of it) or mix something together, can make new or different recipe, and I know the reason why I love to bake and cook, it's because I like to play with the ingredients.
Grab a simple chocolate bar, there are endless possibility, you can turn them into many things, and today I turn it into ice cream. The ice cream recipe is very easy to follow, all you have to do is melting it with milk and mix it with whipping cream. If you don't have ice cream machine, you can churn it by hand mixer. Freeze the ice cream base for 2-3 hours and take it out of the freezer and beat with hand mixer until smooth repeat this process for 3-4 time until you get smooth ice cream.
I think about make the ice cream sandwich so I have to make the cookie too ^^. I choose the chocolate butter cookie. This cookie is not too sweet so it will be great to eat it with Mars ice cream. The most important thing when making cut-out cookie is the dough must be cold, chill it before cutting and baking is a must, or your cookie will lose its shape while baking.
So, start looking around, your simple ingredients can become special, and it's because of you ^^.

Note: Because the ice cream melt quickly, keep them in the freezer all the time, take them out when you ready to eat it.



 Chocolate cookies with Mars ice cream filling 

 -Mars Ice cream-
Makes about 1 litre
260g ........................... Mars chocolate bars
250ml ......................... Whole milk
500ml ......................... Whipping cream

-Chocolate butter cookies-
Makes about 55-60 pieces (using 4 cm cutter)
145g ............................ Unsalted butter
22g .............................. Cocoa powder
1/2tsp .......................... Instant coffee granules
100g ............................ Granulated sugar
1/8tsp .......................... Salt
1 ................................... Egg yolks
1/2 tbsp ....................... Vanilla extract
160g ............................. All purpose flour

Make the ice cream
 Chop Mars chocolate bars into small pieces and put them in the pan with milk. Place the pan over the medium heat, stir until the chocolate bars melt completely.
Mix the milk and chocolate bar mixture with the whipping cream and chill.
Churn in an ice cream machine.
You can pipe the ice cream into a silicone mould or pour the ice cream into the pan (brush the pan with oil and line with plastic warp before using).

Make the cookies
 Melt 30g of butter and mix in the cocoa powder and instant coffee granules.
Beat the rest of the butter with sugar and salt until light in color, mix in the yolk, vanilla extract and cocoa mixture, beat until combine.
Mix in the flour in 3 addition, press lightly until it form a soft dough.
Roll the cookie between 2 sheet of baking paper until 5 mm thickness, refrigerate for 1 hour.

Preheat the oven to 190°C
Line the baking sheet with baking paper or silpat.
Cut the dough into desired size, and place them on the prepared baking sheet. If the dough start to melt, refrigerate it for 30 minutes before baking 
Bake for 9-10 minutes.
Let them cool completely on the baking sheet.

Sandwich the cookies:
If using silicone mould, press the ice cream out of the moulds and sandwich the cookie together.
If using the pan, remove the ice cream from the pan, cut into desired size and sandwich the cookie together.
Put them in the freezer until you ready to serve.
For this recipe you will get about 30 pieces of Chocolate cookies with Mars ice cream filling, and some ice cream left.
