Easy no oven needed bread: Crumpets

I have a lot of things that I want to try, new recipes, new ideas and new projects ^^ sometimes I want to have 48 hours a day, haha.

But I know that even I have more time, I still can't do everything, so rather than rushing, I try to slow down. One thing at a time is enough.
Because I can't forget the reason why I started cooking and baking, I want to enjoy the moment both while making it and eating it. So, this time I make some simple bread to share with my family. If you never made bread before this kind of bread is a good recipe to start with, no need to knead and no oven need. The crumpet is a griddle bread, means you don't have to bake it but cook it on a griddle or pan. The only thing that you is a rings, you can use large cookie cutter too, make sure that it quite high (about 2.5-3 cm), so it will be enough room for the crumpet to rise while cooking.
The crumpet will be great to be serve with a lot of butter, serving hot from the griddle is recommended, but you can let it cool and toast it before serving too. I use it instead of English for making egg benedict because it easier and need less time to prepare ^^.



Crumpets
Makes 10-12

175g ........................... Bread flour
175g ........................... All purpose flour
14g ............................. Instant yeast 
1tsp ............................ Granulated sugar
350ml ........................ Warm milk
150-200ml ................. Water
1/2tsp ......................... Baking soda
1tsp ............................. Salt
.................................... Oil for cooking (I use rice barn oil)


Mix both flour together in a bowl. Stir instant yeast and sugar into the milk.
Pour the milk mixture into the flour bowl, beat to combine until you got smooth batter. Cover the bowl with plastic warp and let it rise for 1 hour.
Mix 150 ml of water with salt and baking soda, then pour into the batter bowl, stir until evenly combined. Add more water until you get a thick dropping consistency. Cover the bowl and let it rest for 20 minutes.

Heat a griddle on medium-low heat, grease the inside of 7 cm (3 cm height)  metal rings. Lightly grease the griddle.
Cook the crumpet by spoon the batter into the rings, about 6-8 minutes then turn the crumpet upside down to cook another side of the crumpet (about 3 minutes).
Remove the crumpet from the griddle and remove the ring.
Serve hot with butter or let it cool and toast it before serving.
