Mini Youtiao (油条) No Yeast and very easy version

In Thailand, if you go to the market esp. in the morning, you will find this fried snack alongside with the soy milk, it's one of Thai's favorite breakfast.




When I was a child (^^), eating it with sweetened condensed milk was the most delicious way to enjoy it. As the traditional recipe calls for yeast and ammonia, many people think that making this kind of snack at home is not possible and even you can find ammonia, the smell of it can turn people away!
But you can make delicious Youtiao with less ingredients than you think and yes, it's easy and very quick. This recipe doesn't need yeast and hard to find ingredient -Ammonia-, plus you can make it in less than 40 minutes.
Just mix all the ingredients together, and let the dough rest for 30 minutes. The only trickiest process is shaping the Youtiao, but you can solve it with load of flour, hehe. Sprinkle the work surface and the dough with flour before shaping and cutting, as it's very moist and sticky, you don't need to worry about putting too much flour into the dough as long as you don't knead the flour into it. I think the one of the best thing that you can get from making it at home is the oil that you use for frying ^^, the one from the market can compare to your homemade one!

 Mini Youtiao (油条) 
(or Pathongko in Thai)
Makes 20 (about 6 cm Youtiao)



115g ............................ All purpose flour (plain flour)
1tsp ............................. Baking powder
1/8tsp ......................... Baking soda
1/4tsp ......................... Salt
2tsp ............................. Granulated sugar 
100ml ......................... Water
.................................... All purpose flour (plain flour) for sprinkle over the work surface
..................................... Oil for frying (I use rice bran oil)





 Sift the flour, baking powder, baking soda and salt into a bowl.
Pour the sugar into the bowl and whisk together.
Pour the water into the bowl, and mix until combine.


 Cover and let it rest for 30 minutes.


 Pour the oil into a pan and heat to 170C while shaping the dough.
If you don't have a thermometer, just adjust the heat ^^, because if the oil is too hot, the Youtiao will brown too quickly and it won't be crispy.

 Sprinkle work surface with load of flour ^^.
Work with half of the dough is recommended!!!
Sprinkle flour over the dough.

 Press the dough to 3-4mm in thickness.
Cut into pieces (1.5X4 cm)
 Stick 2 pieces together by using a drop of water.


Lightly stretch the dough and fry in 170C hot oil.


Fry until golden brown, place on paper towel to remove some oil, and enjoy it with anything you want.

  1. omg! i love these! when i lived in paris i used to go to this very typical traditional restuarant, where they only spoke chinese and was full of chinese people and I would get these! Love them! :)

  3. Don't have baking powder. May I know what can be used as a substitute for baking powder please?

    1. You can use 1/4 tsp of baking soda and ½ teaspoon of cream of tartar instead of 1 tsp baking powder.
